The Lord of the Rings (The Fellowship of the Ring, The Two Towers, and The Return of the King) by J. R. R. Tolkien

The classic. Though a big lagging in parts the shear scope of Tolkien's seminal masterpiece is incredible. The different lands, people and cultures describe are intricate and delicious in their detail. Though the last part is quite short (excepting the rather exhaustive appendices included at the end) the trilogy reads well from start to finish with many of the characters and places now part of popular mythology.
